About Winterlust
Winterlust is an annual dome dining Vancouver experience hosted by H Tasting Lounge inside The Westin Bayshore.
This 2021, they introduced five brand new heated Alpine-inspired domes. Each dome measures 8′ by 8′ and features panoramic glass panelling, allowing guests to marvel at Coal Harbour’s waterfront views as they dine. Talk about a visual treat too!
Reservations
Online reservations are required. Since Winterlust is so popular, it actually sells out super fast. With that said, I recommended booking a table as early as possible.
Minimum Spend
In addition to making online reservations, each booking is also subject to a minimum spend. The amount depends on which day of the week you visit (and what time), and you will be asked to prepay at the time of your booking.
- Monday to Wednesday Lunch: $150
- Thursday to Sunday Lunch: $200
- Weeknight Dinner: $300
- Friday & Saturday Dinner from 6pm: $400
- Weekend Breakfast: $150
- Minimum spend does not include taxes or gratuity.
Dome Capacity
Each dome can accommodate up to six guests maximum.
For dinner on Friday or Saturday, this works out to be roughly ~$67/person. I personally think that is moreeeee than worth it for the quality of food + drinks you are getting. Not to mention, the experience itself is magical and well worth the price!
Menu
Apart from the weekend breakfast being a 3-course meal, everything else is family-style dining and great for sharing.

I had the pleasure of attending a media dinner back in October. Every dish was absolutely delightful. Even as I share this with you, I am drooling in front of my laptop!
Bread & Oil. Sourdough boule bread with extra virgin olive oil candle and balsamic vinegar.
Prawn and Scallop Ceviche dressed in coconut milk, calamansi, pickled chili, avocado, mango, cilantro, and chive oil paired with taro chips.
Smoked Bison Tartare. Albeta bison, shallot, brandy, chive, grainy mustard, and egg yolk gel atop sourdough crostini.
Salmon Nori Crisps. Lightly cured salmon, tarragon yogurt, pressed lemon, cucumber, and pistachio.
Ahi Tuna Tataki. Crispy rice cake topped with tuna, wasabi, mayo, ponzu glaze, and tobiko.
Wild Mushroom Gemelli (Vegan). Mikuni wild mushrooms, arugula, roasted garlic cashew cream sauce, sourdough crumb, and truffle oil pasta.
Beef Striploin. 10oz grass-fed certified angus beef with smoked celeriac and potato purée, cipollini onion,f ried brussel sprouts, and red wine jus.
Miso Glazed Sablefish with oyster mushroom, yaki-onigiri, baby bok choy, and bacon-ginger dashi.
Everything was incredibly fresh and made with locally-sourced ingredients. As a matter of fact, H Tasting Lounge is a strong advocate of sustainability and uses seafood that is Ocean Wise recommended.
Of course, can’t forget about dessert!
Warm Apple Galette. Uno pumpkin gelato and spiced rum caramel atop of a warm apple galette.
Cranberry White Chocolate Cheesecake. Paired with cranberry-lemon compote and orange curd.
Apart from these delicious creations, their boozy cocktails are a must-try as well.
